It wouldn't bother me if Jesus were married but there just isn't any concrete evidence for it. If we take the John verses, for example, it says right at the start that he was invited to the wedding. People aren't invited to their own weddings!
As for the for Gospels not being written by the apostles who knew Jesus, that is just speculation. I agree that the oldest MSS were written a few decades after the events but we don't know that they weren't copied from yet older MSS.
