Early Egyptologists ascribed the cartouche of Khufu - sieve, quail, viper, quail - as Shofo.

The cartouche itself has not changed, Scott. It is our pronunciation of it only that has changed. Shofo to Khufu.
The writer of the text above even writes that the cartouche is: "Shofo or Khof."
Figure 1a in the image is the 'nswt bty' name, prefaced by the sedge plant and the bee glyphs, the Khnum Khfw cartouche can also be seen above (2) and it is beyond argument that the 'w' follows the 'f' in the vertical cartouche inscription: Khnum Khfw.
