You asked why the Great Pyramid shows no obvious signs of wind or water erosion.

The answer is because the GP as it appears today is not as it was originally constructed. The pyramid was covered in limestone casing stones so that it would have appeared completely smooth to the onlooker.

Given that the casing stones survived for at least 2500 years, this is one reason for the obvious dissimilarity between the structures you compared.
