With the granites in the Pyramids, especially the Great Pyramid, you also have to be aware of their characteristics and what it takes to shape them. You also have to know about how crystalline minerals grow in liquid phases of melts and about nucleation rates, cooling rates, phase transitions within minerals upon cooling, the effects of liquids on crystal growth (miscibility and immiscibility) etc etc. Unless they had a method of cold casting the stones or a way of growing the rocks at an extremely accelerated rate, it would be next to impossible of shaping any igneous rocks they used without displaying telltale signs that the rocks were altered. At the very least they would show signs of ductile deformation.
If they did cast the stones and then put them in place (much like building with mud bricks), then they had a technology way beyond anything we're presently capable of. If they were capable of that, I would dare say their general level of technology as a civilisation would also reflect that.
