The latitude of 29° 58’ 44” N is the original latitude of the building when it was constructed, and the figure you quote is a modern value. The difference between the two is due to tectonic plate movement since the pyramid's construction, which is considerable.
The movement of the North African plate is detailed here [en.wikipedia.org] and the pyramid is currently over 100 m away from where it was when it was built, when latitude is being considered.
If the latitude of the building is important, which it is, then the original value at the date of construction needs to be used.
