Because a forgers primary objective is to deceive.
Giving the impression that the cartouche continues below and behind the granite beam would go some way to prove that the catouche is contemporaneous with construction.
Half of the cartouche embedded within the structure.

Why would the builders paint half a cartouche onto a limestone block?
