I know what you mean ..
They tend to use the term "quarrying" as a generalisation for stone cutting, salvage, acquisition and removal.
For example, "The pyramids were "quarried" for their casing stones".
Not technically correct in a construction context, but it's OK, every discipline has it's own language and vocabulary.
