Polishing is all it did, it removed the surface irregularities. Then it brick walled.
No more progress. No cutting. Try yourself.

In terms of using copper tubes to make bore holes in granite all I can say is they didn't try it and think it through. The AE didn't have seamless tube. If they made tube by rolling and soft soldering that's fine for ornaments and teapots. Not going to hold up in a drill my friend..
I've spent a lot of time in academia. It is possible that the same old ideas just get accepted and written and re-written without question. With nothing more than that all important biliography for support.
In fact some don't even bother to read the damn book they just go straight to that all important bibliography.
Path of least resistance.

No it's institutionalised and accepted practice. Not a conspiracy. The economic money go round.

Not necessarily. However in most disciplines such as medicine and engineering those victorian books are considered a tad out of date. Methods and techniques move forward. New ways of looking at evidence. Far more people looking more critically at the evidence. Today people are far less restraind by socio political and religious pressures.
Look at Darwin .. How many years before he had the courage to publish?

As a kid I was taught that dinosaurs lumbered around dragging their tails and were to stupid to evolve and survive.
Now we have them multicoloured, feathered and sprinting. Top of the tree for a couple of hundred million years.
My advice is don't read victorian dinosaur books.

You suppose wrong. Try not to suppose.
